I'm going to make some Ningxia gummies and these are going to be extremely healthy because


I'm not even going to put any extra junk juices or anything in it. Literally just Ningxia Red juice and gelatin. So, this is how you do it! So to start, you need to grab Ningxia. You will need a cup and a half of Ningxia Red and you will need 4 tablespoons of grass fed unflavoured gelatin and mine is beef hide gelatin, Great Lakes unflavored in the orange

can. I also have the green can which I bought one time thinking it was for jello-e gelling and it wasn't. It wasn't gel, so don't get the green can if your doing it for gummies. And so, 4 tablespoons of that. So what we are going to do to start is you'll take half a cup of your Ningxia Red.

Measure it out. Okay. Half a cup of Ningxia Red and your going to bring it to a boil. So, gonna put it over here in my little pot here. And I'm going to bring it to a boil! And then, I'm going to measure out one cup of Ningxia Red, not boiled, in my measuring

cup here. That's a lot of Ningxia Red! We're just going to have that ready for when the boiled Ningxia Red is ready. I'm going to use a glass bowl and it will be for whisking together the boiled Ningxia Red, the gelatin and the cold Ningxia Red or just room temperature. Going to get a whisk.

I need to get my gelatin ready. I'm going to pour the 4 tablespoons of gelatin in the bowl. And 4! Okay. That should be good! So now what I'm going to do, is I'm going to pour this hot Ningxia Red into the bowl

with the gelatin and as it comes in I'm going to briskly, briskly really fast and maybe I should be wearing an apron so I don't get this all over my shirt! And then, I'll pour the other Ningxia into it. Whisk, briskly again! It looks pretty dissolved to me. So now, what I'm going to do is I'm going to put them into the molds.

So my molds, I got from Amazon. I don't even know what they were called. I just ordered some molds. These ones have some heart shapes and some squares and some, just circles. Different shapes in them! And then I also have just the regular one umm and this is from Superstore.

It's just circles! So those are my two, so I'm going to now fill the molds with a spoon. I'm going to take a spoon and just fill the molds. One at a time with some liquid some liquid. So, once your Ningxia gummies are in your molds, what your going to do is your just

going to pop them in the fridge for at least an hour and after an hour they should be starting to gel. So I'm going to put them in the fridge and then come back and check them in one hour. Well, there you have it! My Ningxia gummies are all out of the fridge and ready to go. So if your wondering about the benefits of gelatin, it's very nourishing for your gut.

- The modern diet is the reason why people

all over the world are fatter and sicker than ever before. In this video, I'm looking at five graphs that clearly show why things have turned out the way the have. Sometimes, we have to face the truth. (chimes)

Number one. Added fat intake has spiked dramatically, mainly from vegetable oils. The total amount of fat we consume has increased a lot over the past century. You can see the red line shows

total added fat intake. In the 2000's, it was around 50 pounds per person per year, whereas it was much closer to 30 pounds per person per year for most of the century. Fat is the most calorie dense nutrients, so that's a heck of a lot of extra calories

each person is eating per year. You can also see from the blue line the types of added fats we eat have shifted from animal fats like butter, tallow, and lard. We're now eating way more vegetable and seed oils instead.

Which is shown by the green line. That's things like soy bean, corn, canola oil, and sunflower oil. Interestingly, this graph and several others all show that total and added fat intake did not decline at all when the low fat guidelines

were introduced in the 1970's. They all show that fat intake just kept on increasing which indicates that a, the low fat guidelines didn't work particularly well, and b, nobody ever reduced their fat intake. So, we can't blame a low fat diet

for the current health problems because nobody was eating a low fat diet. Number two. Vegetable oils have altered the fatty acid composition of our bodies. Now, this is really fascinating, also very concerning.

But, Dr. Stephan Guyenet who makes many of these great graphs found that the amount of seed oils, vegetable oils, that we're consuming is so high, that it's actually altered the fatty acid compositions in our bodies. The dots in this graph show the average percent

of linoleic acid found in human fat tissue at different time points. Now, linoleic acid is a type of omega six fat rich in vegetable and seed oils. And, there is a really strong correlation between the linoleic acid we eat

and the linoleic acid in our fat tissue. The percentage has more than doubled since the 1960's. The most commonly consumed vegetable oil in the US is soy bean oil, which accounts for about 70% of calories in the US diet in 1999, which is a lot. Most don't realize that this increase is coming from

the processed and junk foods that we eat, which typically contain large amounts of vegetable oils. So, even if you don't think you eat vegetable oil much, you do. Now, just how influential this high amount of omega six fats in our tissue is to our health

is a highly debated topic. All we do know is that it's definitely not a natural amount to have. Number 3. Consumption of soda and fruit juice has increased dramatically.

Increased fat is certainly not the only problem, but increased sugar as well. The brain doesn't register liquid sugar calories in the same way it registers calories from solid foods. So, even though we consumed the liquid calories,

we're still not satiated. We feel like we haven't eaten anything so then we eat food calories from solid foods as well. And, this combination is pretty much the reason why calorie intake has increased so much. This graph shows the beverage consumption of US adults

from the late 70's up until the mid 2000's based on USDA data. So, you can see that the green line, fruit drinks, which is like juice, remained quite consistent until the 90's. And, then it went up quite a little bit.

Milk has remained consistent. So, the calories we get from milk is about the same the whole way through. The red line is non-diet soda, that means sugar sweetened beverages or soft drinks. And, you can see they were gradually increasing

and then in the 90's especially have gone up. And, it's kind of plateaued which is good, but that's largely where a lot of our extra calories have come from. It's no surprise that one study even found that in children, each daily serving of sugar sweetened

beverages is linked to sixty percent increase of obesity. Number 4. People are eating more junk food than ever. Now we all know this to be true but, most of us don't appreciate the scale of it. Now, this graph shows how the US population

changed it's eating habits in the past 120 to 130 years. Now, at the turn of the 20th century, over 90% of meals were simple, home cooked meals shown in green. Now, less than 10% was other foods shown in blue. By around 2009, about half of what we ate

was home cooked food. Now, you can see the emergence of fast food in our diet shown in red. And now, this graph actually underestimates the true change because a lot of what people are eating at home these days is junk as well.

Compared to what they would have had in the year 1900. Number five. Increased calorie intake overall. So, we've seen from these graphs that people are consistently eating more

- Just as fats used to be, carbs are now being accused

of causing weight gain and heart disease, and all sorts of other health problems. But just like high-fat foods, not all high-carb foods are created equal. In fact, many of the world's healthiest foods have plenty of carbs in them.

In this video, I'm looking at the top five reasons not to fear carbs, the last one we really can't argue with. (chiming music) Number one, early humans ate carbs all the time. Learning to cook was a game-changer for our early ancestors. Cooked meat provided increased protein, fat and calories.

But a flurry of new evidence indicates that carb-rich foods like root vegetables, legumes and even grains were cooked and consumed by our early ancestors as well. Now this is important since cooking these foods makes many of them safer to eat, particularly legumes.

Now, not only would cooked carbs have been more nutritious, they may have also been more appealing to a hungry hunter-gatherer. This theory is supported by emerging biological evidence that shows early humans began developing extra copies of the amalyase gene,

which helps produce the enzymes you need to digest starchy carbs. By analyzing bone DNA, researchers can see that early humans in Europe had developed extra copies of the amylase gene long before they started farming.

Number two, carbs are not inherently fattening. Okay, hear me out here because many people misunderstand what this statement actually means. It's true that low-carb diets can be incredibly beneficial, especially for things like weight loss or diabetes and some other health conditions

and at Authority Nutrition we talk about a lot. But that's because low-carb diets are high in protein which has its own positive effects on metabolic rate and suppressing appetite, and low-carb diets are also lower in refined carbs in junk food that are bad for health. So overall, this makes it lower in total calories

than the typical Western diet. It's not because carbs are fattening themselves. Some sources claim that carbs are the primary cause of obesity due to their effects on insulin and fat storage. In other words, that carbs are uniquely fattening, regardless of total calories.

Now this is called the carbohydrate-insulin hypothesis. The truth is, scientific evidence overwhelmingly rejects this hypothesis. The latest was a metabolic ward trial that compared a high-carb diet, which was 50% carbs, and a very low-carb ketogenic diet, which was 5% carbs

for four weeks at a time. The diets were equal in calories and protein and subjects had no access to any outside foods for the entire time. After the first four weeks on the high-carb diet, participants lost 1.1 pounds, or half a kilo

of body fat on average. This is shown by the blue line in Dr. Guyenet's graph which doesn't show the first two weeks of the high-carb diet because the first body composition measurements were at the two-week mark. But then, after switching to the very low-carb diet

for the remaining 30 days, from day zero on this graph, participants lost just 1.1 pounds of body fat again. Now, this is was despite a sharp drop in insulin levels by almost half in that 30 days. So there was no difference between the eating patterns and fat loss

despite the huge difference in insulin. Effectively disproving the carbohydrate-insulin hypothesis. Even if we ignore the clinical studies, which is the powerful evidence we have, the idea that carbs are inherently fattening doesn't fit the historical

and observational evidence available. Indigenous groups like the Tarahumara Indians and Kitavans all thrived on high-carb diets for hundreds of years. Obesity was rare if not non-existent in all of these indigenous groups.

For example, Kitavans have virtually no overweight people and very low insulin levels, despite a diet that was 70% carbohydrate. So immediately there we can see that carbs, albeit they are healthy carb sources, but they're still carbs, they're not making them fat.

The same was observed for pre-industrialized Asian populations up until the 20th century. They were living on staple foods like rice, noodles, potatoes, and fruit. Even by the 1990s, 50 to 60% of calories eaten in Japan and China still came from carbs.

And this was more than the US or UK, yet obesity rates were much, much lower. If carbs themselves are fattening, these populations would not have had lean bodies and good health overall, regardless of how active they were. Number three, fiber is important for optimal health

and it's a carbohydrate. Nutrition is rarely black and white, but one thing that all the experts agree upon is that more fiber is beneficial for health. Soluble fiber in particular is known to be good for heart health and weight management.

Foods that contain palm oil could pose a cancer risk, according to the European Food Safety Authority (EFSA), and Nutella has so far faced the brunt of the public backlash. Other popular products that contain palm oil include Cadbury's chocolate, Ben and Jerry’s ice cream and Clover spread, reported The Independent. The report by EFSA said palm oil is more carcinogenic than any other oil, echoing similar claims made by the World Health Organisation.

Several retailers in Italy – including Coop, the country's biggest supermarket chain – have even boycotted the chocolate and hazelnut spread over the claims. But Ferrero, which makes the spread, has hit back by launching an advertising campaign to assure people that its product is safe. Nutella is the company's flagship product and makes up about a fifth of its sales, The Telegraph reported.

The company said it will keep using palm oil in Nutella, despite fears over its safety, to preserve the spread's quality. The oil is apparently used to give the spread its smooth texture, Ferrero said, adding that no other oils would work in the same way. Vincenzo Tapella, Ferrero's purchasing manager, told Reuters: “Making Nutella without palm oil would produce an inferior substitute for the real product, it would be a step backward."

Ferrero didn't mention that palm oil is one of the cheapest oils and that switching to alternative oils, such as sunflower or rapeseed, could increase the cost of making Nutella by up to as $22m (£18m), Reuters reported. Ferrero hasn't yet commented on these figures. Palm oil is dangerous because it produces compounds called glycidyl fatty acid esters (GE) when it's heated above 200 degrees celsius, a process involved in the manufacturing of

many foods. “There is sufficient evidence that glycidol is genotoxic and carcinogenic," said Dr Helle Knutsen, chair of Contam, the EFSA panel that investigated palm oil in May. "Therefore the Contam panel did not set a safe level for GE.” These compounds can also be found in other vegetable oils, margarines and processed foods, but they are found in higher, potentially dangerous, amounts in palm oil, the ESFA report

said. Palm oil has been controversial for a while – and not just for health reasons. According to a report by Amnesty International in November, global brands such as Colgate-Palmolive, Kellogg's, Nestlé, Procter and Gamble, Reckitt Benckiser and Unilever have been using palm oil produced by children – some as young as eight – working on hazardous Indonesian plantations.

It has a well-known harmful impact on the environment, too, having been linked to mass deforestation and the loss of habitats of endangered species such as orangutans. It's a sad state of affairs, but it's probably time to look for a healthier and more ethical alternative to our favourite chocolate spread. Update: A spokesman from Ferrero sent the following statement: "The health and safety of consumers is an absolute and first priority for Ferrero and we confirm that Ferrero products

are safe. EFSA (European Food Safety Authority) has analysed the presence of contaminants in a large number of products and oils stating that the presence of contaminants depends on the oils and fats used as well as the processes they are subjected to. "It is for this reason that Ferrero carefully selects quality raw materials and applies specific industrial processes that limit their presence to minimum levels, fully in line
